Fall is quickly upon us, but I think we need one last proper shout-out to summer: TACOS! This deliciousness of these tacos is matched only by the simplicity of the recipe. I stumbled across this recipe several years ago hiding inside the comments on a webpage that listed another, not so great, taco recipe. According to the author of the comment, who was apparently from Mexico, this was the authentic way to make flank steak tacos. Who knows how much truth there is behind that, but it's a killer combination of ingredients. I prefer the flat iron cut over flank steak, but either will work. Note: I didn't include measurements for any of the ingredients. Just use your best judgement, and have fun with it! Properties - Flat iron steak - Fresh-squeezed lemon juice - Chopped cilantro - Minced garlic - Salt and pepper - Corn tortillas - Chopped onion - Lime wedges - Avocado (optional) - Sliced jalape√±os (optional) - Sliced radishes (optional) Methods 1. Marinate the flat iron steak in lemon juice, cilantro, garlic, salt, and pepper for 1 to 4 hours 2. Let the steak sit out of the refrigerator for an hour before grilling 2. Grill the steak to medium rare, preferably over charcoal or wood fire 3. Remove the steak from the grill, and let it sit for 5 minutes 4. While the steak is resting, go ahead and heat up your tortilla shells in a pan on high 5. When the steak is done resting, slice it thinly across the grain 6. If you have a ripe avocado on hand, waste no time spreading it on the inside of the taco shells 7. Add the steak, and top with onion, cilantro, and fresh-squeezed lime juice 8. If you want to bring the üî•üî•üî•then add jalape√±os, and if you want crunch then add sliced radishes 9. Eat tacos immediately Enjoy!
